Espillette Sweet Potato Frites

Eating my way through Southwestern France, I was shocked by the mild flavor of "spicy sausage" made from ground veal and the signature French pepper, espillette.

The French have an affinity for many flavors, but spicy isn't one of them.  Eating my way through Southwestern France, I was shocked by the mild flavor of "spicy sausage" made from ground veal and the signature French pepper, espillette.  My central cost California palette was sorely disappointed by the lack of heat, but the flavor of this Basque pepper left me ready for more.  

Fast forward to life back in sunny CA, and a return to more mindful (less wine, mousse de canard, and siegel bread) eating, I decided to incorporate the espillette flair with a French classic: the frite.  But, of course, living the Whole30 nightshade-free life, my frites are sweet potato only!

Espillette Sweet Potato Frites

2-3 Sweet Potatoes

2 TBS Avocado (or Olive) Oil

Pepper to Taste

Salt to Taste

1/2 tsp Espillette Pepper 

Slice anywhere between 1 very large and 3 small/medium sweet potatoes of your choice.  I would recommend a Hannah or O'Henry, but God knows there are plenty of varieties to choose from. 

It's best to aim for 1/4" sized fry shaped slices if you're looking for a crisp exterior and slightly soft interior.  But Maybe thick cut or oddly shaped fries are more your jam. 

After slicing and dicing, mix oil (I use Avo) salt, pepper, and the magical espillette in a bowl.  Toss in fries, and coat evenly with mixture.  They will develop a pinky orange tinge from the pepper.  Then you'll know they're ready for baking. 

Bake at 450 Degrees F for 10 minutes.  Flip fries.  Bake 10 more minutes. 

Remove from oven.  And enjoy a little bit of French flair in your kitchen with the crunch and sweetness of the potato married with the soft bite of pepper. It's delicious no matter how far you are from France.
